Made with boiled beans, a tahini-based tarator sauce, and fresh vegetables, Antalya piyaz is a nearly century-old traditional delicacy that has earned fame far beyond the region. At Belconti Resort Hotel, we bring this flavor to our guests' tables every Wednesday evening, paired with Aksu köfte, another emblem of local cuisine.
The Geographic Indication of Antalya Piyaz
Antalya piyaz is a product registered with a Protected Geographical Indication by the Turkish Patent and Trademark Office. This registration is official recognition that the dish is unique to Antalya, both in its ingredients and its preparation method. What sets it apart from bean salads made in other regions is the small-grained Çandır bean and the tahini-based tarator sauce.
How is Antalya Piyaz Made?
Ingredients: Small-grained dried beans (Çandır beans), tahini, garlic, rock salt, lemon juice, vinegar, tomatoes, spring onions, boiled eggs, parsley, olive oil, red pepper flakes.
Preparing the sauce: A portion of the boiled beans is lightly mashed; tahini, lemon juice, vinegar, crushed garlic, olive oil, water, and salt are added to create a smooth tarator sauce. This sauce gives the piyaz its characteristic creamy texture and slightly tangy flavor.
Serving: The tarator sauce is drizzled over the boiled beans. The dish is garnished with diced tomatoes, quartered boiled eggs, finely chopped spring onions, chopped parsley, salt, black pepper, and red pepper flakes before serving. Those who like it can complete the dish with bread or hot green peppers on the side.
