Antalya-style pumpkin dessert is a product with Geographic Indication status. Geographic indications are granted to preserve exquisite flavors passed down through generations of civilizations that have lived on these lands, and to add value to the cities that produce them.
Although pumpkin dessert is made throughout the country, what sets the Antalya region apart from the rest is its preparation and presentation.
Antalya-style pumpkin dessert:
Ingredients
Pumpkin (firm variety preferred): 1 kg
Granulated sugar: 400 g
Cinnamon stick: 1
Preparation
The sliced and deseeded pumpkin is thinly peeled. The peeled pumpkin is cut into pieces about 7–9 cm long depending on the size of the slices. The pumpkin is placed in a shallow dish and covered with sugar. It rests in the sugar for at least 8 hours until it releases its juice. The pumpkin, having released its juice, is baked covered in an oven preheated to 180°C for 10 minutes, then uncovered and baked for another 15 minutes. The pumpkin should not be overcooked - check doneness with a fork.
Once removed from the oven, the pumpkin is left to cool. When serving, tahini made from double-roasted Manavgat sesame seeds is drizzled over the pumpkin on the plate. Finally, it is served topped with crushed walnuts. Although pumpkin dessert can be found in many places in Antalya, we recommend 7 Mehmet Restaurant and Topçu Döner, which carefully prepare and serve traditional dishes.
Belconti Resort Hotel continues to feature traditional flavors at its buffet. Our carefully prepared Antalya-style pumpkin dessert is served for our guests' enjoyment every Wednesday.
